I struggled with having enough milk at times when I was breast feeding my oldest daughter. I came across a few lactation cookie recipes, but didn’t really like the way they turned out. So I decided to combine them and make one of my own. These cookies are delicious – and I mean delicious. You will have a hard time only having one. But the good thing is that they are packed with good stuff, so you don’t have to feel guilty about having 3 or 4.
I often have friends who have requested these cookies from me, and I make them for all my friends who are new moms that are breastfeeding. They really work.

Lactation cookies

Ingredients
- 3 cups steel cut/ old fashioned oatmeal
- 2 cups all-purpose flour
- 1.5 cups brown sugar
- 1 cup milk chocolate chips
- 1 cup salted butter
- 4 tbsp water
- 4 tbsp Brewers Yeast
- 2 tbsp Flaxseed Meal
- 1 tsp vanilla extract
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp baking soda
- 2-4 tbsp chia seeds
- 2-4 tbsp hemp seeds
- 1/2 cup shredded coconut
- 2 eggs
Instructions

Preparation time is around 15-20 minutes.

Preheat the oven to 350F.

Mix together 2 tablespoons of flaxseed meal and water, set aside for 3-5 minutes.

Cream (beat well) butter and brown sugar. Add eggs one at a time, mix well.

Stir flaxseed mixture and add with vanilla to the butter mix. Beat until blended.

Sift together dry ingredients, except oats and chips.

Add to butter mixture. Stir in oats then chips.

Scoop or drop onto baking sheet. The dough is a little crumbly, it might be easier if you use a scoop- I just use a spoon- no need to get too fancy.

Bake for 10 minutes. Makes about 4 dozen.
